Richard's Garlicious Crunchy Croutons
These croutons are the perfect addition to your salads, and they are also great on soups or as a crunchy snack!
Ingredients: good quality white bread; extra virgin olive oil; Italian seasoning (if desired); Richard's Famous Garlic Salt
Preheat oven to 375 degrees. Cut bread into 1" cubes. You will want about 6 cups. We like good quality white bread, but you can try other breads if desired. Put bread cubes in a large glass mixing bowl. Drizzle with 1/4 C. extra virgin olive oil. Toss together. Sprinkle with 1 T. Italian Seasoning (or 1 tsp. dried oregano, 1 tsp. dried basil, 1/2 tsp. dried sage, 1/2 tsp. dried rosemary). Sprinkle with 1/4 tsp. Original or Firecracker flavor Richard's Famous Garlic Salt. Toss together. Spread in a single layer on a large cookie sheet. Bake in middle of oven for exactly 10 minutes. Remove from oven and allow croutons to cool on cookie sheet. Note: do not place in an airtight container while the croutons are warm; they will lose their crispness.
Virginia's Amazing Caesar Salad
This recipe comes from Richard's wife, and she is always asked for the recipe. It is bright, lemony, and does not have the heavy garlic taste that some dressings have. For dinners with family and friends, Virginia is often asked to bring her special Caesar salad.
For the dressing: In a small bowl, whisk together 2 T. red wine vinegar, 1 T. fresh lemon juice, 3 T. mayonnaise, and 1/4 tsp. Richard's Famous Garlic Salt.® While whisking, slowly drizzle in 3 T. of Extra Virgin Olive Oil until thick and creamy. Stir in 2-3 tsp. freshly grated lemon zest and 2 T. grated parmesan cheese. This makes about 4 servings. You can add a spoonful of anchovy paste, if desired.
Place washed & dried bite-size pieces of crisp Romaine lettuce in a large salad bowl. Pour dressing over the top and toss. Add croutons (recipe above) and shaved Parmesan cheese, if desired, toss lightly, and serve immediately on cold plates. We place our salad plates in the freezer for a few minutes to get them nice and cold. Serves 4-6.
